Ingredients

Scale

Wet Ingredients

  • ½ cup unsalted butter (1 stick), melted
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • Heaping ½ cup creamy peanut butter (standard commercial brands like Jif or Skippy recommended)

Dry Ingredients & Mix-ins

  • 1 cup all-purpose flour
  • 1 cup Peanut Butter M&Ms
  • ¾ cup semi-sweet chocolate chips or chunks (or a combination)
  • ½ cup Reese’s Peanut Butter Chips
  • ⅓ cup Heath Bar Toffee Bits

Instructions

  1. Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with aluminum foil and spray lightly with cooking spray to prevent sticking. Set aside.
  2. Melt Butter: In a large, microwave-safe bowl, melt the butter by microwaving for about 1 minute on high power. Let it cool slightly so it won’t cook the egg in the next step.
  3. Mix Wet Ingredients: Add the egg, brown sugar, and vanilla extract to the melted butter and whisk until the mixture is smooth and evenly combined.
  4. Add Peanut Butter: Stir in the creamy peanut butter thoroughly until the batter is smooth and uniform in texture.
  5. Incorporate Flour: Add the all-purpose flour and gently stir until just combined. Be careful not to overmix to keep the bars tender.
  6. Fold in Mix-ins: Fold in the Peanut Butter M&Ms, semi-sweet chocolate chips, Reese’s Peanut Butter Chips, and Heath Toffee Bits evenly throughout the batter.
  7. Transfer to Pan: Pour the batter into the prepared baking pan, smoothing the surface with a spatula. Optionally press a few extra M&Ms on top for attractive presentation.
  8. Bake: Bake in the preheated oven for about 25 minutes or until the top is set and a toothpick inserted in the center comes out clean or with a few moist crumbs but no wet batter.
  9. Cool and Serve: Allow the bars to cool completely in the pan for at least 30 minutes before slicing into squares. Store airtight at room temperature for up to 1 week or freeze up to 6 months for longer storage.

Notes

  • Use smooth, commercial creamy peanut butter for best texture; homemade or natural peanut butter may be too runny.
  • Do not overmix the batter once flour is added to keep cookies soft and tender.
  • For added decoration and color, press extra Peanut Butter M&Ms on top right before baking.
  • Bars keep well stored airtight at room temperature for one week or can be frozen for up to six months.
  • Make sure to cool bars completely before slicing to avoid crumbling.
