Instructions

  1. Mix Ingredients: In a medium bowl, whisk together the plant-based milk, dairy-free Greek-style yogurt, chia seeds, maple syrup, vanilla extract, and espresso until the mixture is smooth and well combined.
  2. Rest and Re-whisk: Let the mixture sit at room temperature for 5 minutes to allow chia seeds to absorb liquid. Then whisk again thoroughly to break up any clumps of chia seeds for an even texture.
  3. Chill: Divide the pudding mixture evenly between four small jars or serving containers. Cover each tightly and refrigerate for at least 3 hours or preferably overnight to achieve a thick, creamy pudding consistency.
  4. Serve: Just before serving, dust the top of each pudding with cocoa powder and garnish with fresh or frozen raspberries if desired for added flavor and presentation.
