  • 2 cups tortilla chips, crushed
  • 1 (14 oz) can black beans, rinsed and drained
  • 1 (12 oz) can corn, drained
  • 1 (15.5 oz) jar salsa (use your favorite kind)
  • 2 cups cheddar cheese, shredded and divided

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease or prepare a 9×13 inch casserole dish to prevent sticking.
  2. Cook Ground Beef and Onion: Heat olive oil in a large skillet over medium-high heat. Once hot, add the ground beef and break it apart with a spatula. Add the chopped yellow onion and cook together for about 5 minutes until the beef is browned and the onion is softened.
  3. Season the Beef: Sprinkle in chili powder, paprika, garlic powder, onion powder, and ground cumin. Stir well to ensure the beef is evenly coated with the spices. Cook for another 5 minutes to develop flavor.
  4. Add Tortilla Chips to Casserole Dish: While the beef cooks, spread the crushed tortilla chips evenly as a base layer in your casserole dish.
  5. Combine Beef Mixture with Beans and Vegetables: Remove excess liquids from the skillet by draining if necessary. Add the black beans, corn, salsa, and 1 cup of shredded cheddar cheese to the beef mixture. Stir and warm on the stovetop until the cheese begins to melt.
  6. Assemble the Casserole: Pour the beef mixture evenly over the layer of crushed tortilla chips. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
