Instructions

  1. Prepare the Chicken: If you don’t have pre-cooked chicken, cook chicken breasts by boiling, baking, or grilling until fully cooked. Allow to cool, then shred or dice into bite-sized pieces for easy wrapping.
  2. Toss Chicken with Sweet Chili Sauce: In a bowl, mix the cooked chicken with ½ cup of sweet chili sauce ensuring each piece is well coated with the spicy-sweet glaze.
  3. Prepare the Vegetables: Wash and shred the lettuce or mixed greens. Thinly slice the cucumber, shred the carrots, and thinly slice the red onion. Slice avocado just before assembly to prevent browning.
  4. Assemble the Wraps: Lay each tortilla flat and spread a thin layer of mayonnaise or Greek yogurt if using.
