Sauce

  • 2 tsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin (can substitute with dry sherry or sweet cooking wine)

Other

  • 2 tbsp oil (vegetable, canola, or peanut)
  • 8 green onions, ends trimmed and cut into 7cm / 2.5” lengths, white parts separated from green parts
  • 2 garlic cloves, finely chopped

Instructions

  1. Mix Sauce: In a small bowl, combine toasted sesame oil, light soy sauce, dark soy sauce, oyster sauce, and mirin, mixing well to create the sauce.
  2. Cook Noodles: Prepare the fresh noodles according to the package instructions. Once cooked, drain them and rinse quickly under tap water to prevent sticking while they rest.
  3. Sauté Garlic and Green Onion Whites: Heat the vegetable oil in a large, deep non-stick skillet or wok over high heat. Add the white parts of the green onions and stir for about 20 seconds. Then add the finely chopped garlic and stir for an additional 10 seconds until fragrant and lightly golden.
  4. Add Noodles and Sauce: Add the cooked noodles to the skillet, then pour the prepared sauce over them. Toss continuously for 1 1/2 minutes to allow the noodles to caramelize slightly and absorb the flavors. If your stove heat is lower, extend the tossing time until caramelization occurs.
  5. Add Green Onion Greens: Finally, add the green parts of the onions and toss for about 20 seconds until just wilted. Serve the Supreme Soy Noodles immediately while hot and fragrant.
