This Red Velvet Earthquake Cake is a decadent and visually stunning dessert featuring a moist red velvet cake base generously interspersed with creamy cheesecake chunks and rich chocolate chips. When baked, the cheesecake and chocolate melt into the cake creating an irresistibly gooey, layered texture that ‘earthquakes’ with every bite.

Ingredients

Scale

Cake Ingredients

  • 1 box red velvet cake mix (plus ingredients called for on the box, typically eggs, oil, and water)

Fillings

  • 1 to 1 1/2 cups cheesecake chunks (prepared or store-bought cheesecake pieces cut into small chunks)
  • 1/2 to 3/4 cup semi-sweet chocolate chips

Instructions

  1. Prepare cake batter: Follow the instructions on the red velvet cake mix box to prepare the batter, combining the required eggs, oil, and water until smooth.
  2. Layer cheesecake chunks: Pour half of the cake batter into a greased 9×13 inch baking dish. Evenly sprinkle half of the cheesecake chunks and chocolate chips over this layer.
  3. Add remaining batter: Carefully spread the remaining cake batter on top, covering the cheesecake and chocolate layer.
  4. Top with remaining chunks: Sprinkle the remaining cheesecake chunks and chocolate chips over the top of the batter.
  5. Bake: Bake the assembled cake in a preheated oven at 350°F (175°C) for 35-45 minutes or until a toothpick inserted into the cake (avoiding chunks) comes out mostly clean and the edges are set.
  6. Cool and serve: Allow the cake to cool for 15-20 minutes before slicing to let the cheesecake and chocolate fillings set slightly for ideal texture.

Notes

  • Use a high-quality red velvet cake mix for best flavor and color.
  • Fresh cheesecake chunks from homemade cheesecake will provide maximum creaminess, but store-bought works well too.
  • Adjust the amount of chocolate chips to your taste for richer chocolate flavor.
  • Ensure the cheesecake chunks are evenly distributed for balanced bites.
  • Do not overbake to maintain gooey cheesecake centers.
  • Serve warm or at room temperature for best texture.
