Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish, such as an 8×8 or 9×9 inch pan, to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, stir together the rolled oats, baking powder, cinnamon, and salt until evenly mixed.
  3. Add Wet Ingredients: Pour in the milk, maple syrup, egg (or chia/flax egg for vegan), melted butter or coconut oil, and vanilla extract. Stir well to combine all ingredients thoroughly. Transfer the oatmeal mixture into your prepared baking dish.
  4. Make Pecan Topping: Melt the butter and maple syrup together in a small saucepan over low heat or microwave until combined. Add the pecans and stir to coat them evenly with the butter-syrup mixture. Pour this pecan topping evenly over the oatmeal in the baking dish and smooth out with a spatula.
  5. Bake Oatmeal: Bake in the preheated oven for 35-40 minutes, or until the oatmeal has puffed up and the top looks golden brown. Once done, remove from the oven and allow it to rest for about 5 minutes before serving.
