Ingredients

Scale

Oreo Crust

  • 20 regular Oreo cookies
  • 1/2 cup unsalted butter, melted

Mint Cheesecake Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons mint extract
  • 34 drops green gel food coloring

Whipped Cream Topping

  • 2/3 cup heavy cream, cold
  • 3 tablespoons powdered sugar

Instructions

  1. Preheat the oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust and cheesecake.
  2. Prepare the pan: Line an 8×8 or 9×9 inch baking pan with parchment paper, leaving an overhang on two sides to easily lift the cheesecake out later.
  3. Make the Oreo crust: Place Oreo cookies into a food processor and blend until they become fine crumbs. Transfer crumbs to a bowl, add melted butter, and stir until combined.
  4. Press crust into pan: Evenly press the Oreo crumb mixture into the bottom of the prepared pan. Bake in the preheated oven for 10 minutes to set the crust.
  5. Beat cream cheese: In a large bowl, use a hand or stand mixer to beat softened cream cheese on medium-high speed until fluffy, about 1 minute.
  6. Add sugar: Slowly add the granulated sugar, mixing on low then medium-high until the mixture becomes light and fluffy.
  7. Incorporate sour cream and eggs: Beat in sour cream until smooth, then add eggs one at a time, mixing well after each addition. Scrape down the sides and bottom of the bowl periodically to ensure even mixing.
  8. Add mint flavor and color: Mix in the mint extract and green gel food coloring just until combined to achieve a minty flavor and vibrant color.
  9. Bake the filling: Pour the cheesecake batter over the baked Oreo crust and level the top with a spatula. Bake for 40 to 45 minutes or until the center is slightly jiggly and the edges are puffed and set.
  10. Cool and chill: Remove the cheesecake from the oven and place it on a wire rack to cool to room temperature. Once cooled, refrigerate it overnight to set completely.
  11. Prepare whipped cream: Before serving, in a medium chilled bowl, beat powdered sugar and cold heavy cream until stiff peaks form to create a luscious whipped cream topping.
  12. Serve the cheesecake bars: Use the parchment paper overhang to carefully lift the cheesecake out of the pan. Cut into bars, top each with whipped cream, fresh mint leaves, and chocolate shavings if desired. Serve and enjoy your refreshing Oreo mint cheesecake bars!

Notes

  • Use full-fat cream cheese and heavy cream for best texture and flavor.
  • Make sure the eggs are at room temperature to prevent curdling of the batter.
  • Green gel food coloring is preferred for a vibrant color without altering the texture.
  • Allow the cheesecake to chill overnight for best results; it helps the flavors meld and the texture firm up.
  • Store leftover cheesecake bars in an airtight container in the refrigerator for up to 4 days.
  • Optional toppings include chocolate shavings or additional crushed Oreos for extra texture.
