Ingredients

Scale

Marinade & Sauce

  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard

Topping

  • 8 oz fresh mozzarella, torn into pieces
  • 2 cups grape tomatoes, halved
  • 2 tbsp fresh basil, chopped
  • Sea salt, to taste
  • Black pepper, to taste

Main

  • 2 tbsp vegetable oil
  • 2 lb chicken breasts, boneless and skinless, pounded to even thickness
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it’s ready for baking the chicken later.
  2. Prepare Balsamic Mixture: In a small bowl, combine the balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard. Mix until well blended to create a flavorful marinade and sauce.
  3. Make Cheese and Tomato Mixture: In a separate bowl, tear fresh mozzarella into bite-sized pieces using your hands. Add halved grape tomatoes and chopped fresh basil. Season with sea salt and black pepper, then toss gently to combine all ingredients evenly.
  4. Heat Skillet: Place a large, oven-safe skillet over medium-high heat and add vegetable oil. Allow the oil to heat until shimmering but not smoking.
  5. Cook Chicken: Season the chicken breasts generously with sea salt and black pepper. Place chicken in the hot skillet in a single layer and cook for 2-3 minutes on each side until the outside is golden brown and caramelized.
  6. Add Sauce: Give the balsamic mixture a quick stir and pour it over the chicken in the skillet. Bring the mixture to a gentle simmer, using a spatula to scrape up any browned bits from the pan bottom for extra flavor.
  7. Bake with Topping: Remove the skillet from heat. Evenly spread the mozzarella, tomato, and basil mixture over the chicken. Place the skillet uncovered in the preheated oven and bake for 18-23 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Rest and Serve: Remove the skillet from the oven and let the chicken rest for 3-5 minutes before serving to allow juices to redistribute. Enjoy your delicious one-pan balsamic chicken!

Notes

  • If you don’t have an oven-safe skillet, sear the chicken in a frying pan, then transfer the chicken and balsamic sauce to a baking dish before adding the mozzarella mixture and baking.
  • For meal prepping, cook the chicken as directed, cool completely, then freeze. Reheat in the oven and add fresh tomatoes and basil afterward for freshness.
  • Adjust seasoning to taste, especially salt and pepper, depending on your preference.
  • Make sure chicken breasts are pounded to even thickness to ensure uniform cooking.
  • Use fresh mozzarella rather than pre-shredded for best melting and flavor.
