This One Pan Balsamic Chicken recipe is a perfect weeknight dinner that’s both flavorful and simple to prepare. Tender chicken breasts are seared and then baked with a tangy balsamic vinegar and honey glaze, topped with fresh mozzarella, grape tomatoes, and basil for a deliciously gooey and fresh finish.

For the Balsamic Glaze

  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard

For the Chicken and Topping

  • 2 lb boneless, skinless chicken breasts, pounded to even thickness
  • 2 tbsp vegetable oil
  • Sea salt, to taste
  • Black pepper, to taste
  • 8 oz fresh mozzarella, torn into pieces
  • 2 cups grape tomatoes, halved
  • 2 tbsp fresh basil, chopped

Instructions

  1. Preheat Oven: Start by preheating your oven to 400°F to ensure it’s ready for baking the chicken after searing.
  2. Prepare Balsamic Glaze: In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard until fully combined.
  3. Mix Topping: In a separate bowl, tear fresh mozzarella into bite-sized pieces. Add halved grape tomatoes and chopped fresh basil. Season with salt and black pepper, and toss gently to combine well.
  4. Sear Chicken: Heat a large oven-safe skillet over medium-high heat and add vegetable oil. Season the chicken breasts with salt and black pepper, then add them to the skillet in a single layer. Cook for 2-3 minutes per side until golden brown and seared.
  5. Add Balsamic Glaze: Give the balsamic glaze a quick stir and pour it over the seared chicken in the skillet. Let it simmer briefly, scraping any browned bits off the bottom of the pan to infuse flavor.
  6. Top and Bake: Remove the skillet from heat. Spread the mozzarella, tomato, and basil mixture evenly over the chicken. Place the uncovered skillet into the preheated oven and bake for 18-23 minutes until the chicken is cooked through and the cheese is melted.
  7. Rest and Serve: Remove the skillet from the oven and let the chicken rest for 3-5 minutes to allow juices to redistribute. Serve warm and enjoy your flavorful one-pan meal!

Notes

  • If you don’t have an oven-safe skillet, sear the chicken in a frying pan then transfer it with the balsamic glaze to a baking dish before adding the mozzarella topping and baking.
  • To meal prep and freeze, cook the chicken as directed, cool completely, then freeze in airtight containers. Reheat in the oven and add fresh tomatoes and basil after warming.
  • For even cooking, pound chicken breasts to an even thickness before searing.
  • Feel free to substitute fresh mozzarella with burrata or a mozzarella blend for a creamier texture.
  • Use fresh basil for best flavor, but dried basil can be substituted if necessary.
