Ingredients

Scale

Chicken & Seasoning

  • 1.5 lbs Chicken breasts, boneless & skinless (cut into bite-sized pieces)
  • 3 tbsp Extra virgin olive oil (divided for cooking)
  • Salt & black pepper (to taste)

Vegetables & Add-ins

  • 2 medium Zucchini (sliced into half-moons)
  • 2 Red bell peppers (diced into chunks)
  • 1 large Red onion (sliced into strips)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves Garlic (minced)
  • 1/4 cup Sun-dried tomatoes (chopped)

Herbs & Garnish

  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (juice only)
  • 0.5 cup Feta cheese (crumbled)
  • 2 tbsp Fresh parsley (optional garnish)

Instructions

  1. Prep Ingredients: Wash, chop, and prepare all vegetables and chicken as described – slice zucchinis, dice bell peppers, slice red onion, halve cherry tomatoes and kalamata olives, mince garlic, and chop sun-dried tomatoes. This ensures everything is ready to go before cooking.
  2. Sear Chicken: Heat half of the olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and black pepper, then add them to the skillet. Sear and cook the chicken until golden brown and fully cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining olive oil. Add sliced onions and minced garlic, sautéing until fragrant and softened, about 2 minutes. Then add the zucchini, red bell peppers, cherry tomatoes, and sun-dried tomatoes. Cook, stirring occasionally, until vegetables are tender but still vibrant, about 5 minutes.
  4. Combine Chicken and Vegetables: Return the cooked chicken to the skillet. Add dried oregano, dried basil, dried thyme, and season with additional salt and black pepper to taste. Toss everything together to combine and heat through for another 2-3 minutes.
  5. Finish and Serve: Remove from heat and stir in lemon juice, kalamata olives, and crumbled feta cheese. Garnish with fresh parsley if desired and serve immediately. Enjoy the Mediterranean flavors!

Notes

  • Use boneless skinless chicken breasts for quick, even cooking.
  • Sun-dried tomatoes add an extra layer of tangy sweetness but can be omitted if unavailable.
  • The dish pairs well with couscous, rice, or warm pita bread.
  • Fresh herbs like parsley enhance flavor but are optional.
  • Adjust the amount of lemon juice depending on your taste preference for acidity.
