Ingredients

Scale

Salmon and Seasoning

  • 4 salmon fillets, center cut, about 6 oz each
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh rosemary sprigs, for garnish (optional)
  • Orange slices, for garnish (optional)

Maple Pecan Glaze

  • 1/2 cup chopped pecans
  • 2 tablespoons ghee or olive oil
  • 1 tablespoon fresh rosemary, finely chopped (or 1/4 teaspoon dried rosemary)
  • 1/3 cup pure maple syrup
  • 2 tablespoons fresh orange juice
  • 1 teaspoon Dijon mustard or stone-ground mustard
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat oven: Set your oven to 400 degrees Fahrenheit to prepare for baking the salmon.
  2. Prep and season salmon: Rinse the salmon fillets and pat thoroughly dry with paper towels. Rub the fillets evenly on all sides with olive oil, then sprinkle paprika, kosher salt, and black pepper over them. Place the fillets in an oven-safe baking dish.
  3. Bake salmon: Transfer the baking dish to the preheated oven and bake the salmon uncovered for approximately 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. Prepare maple pecan glaze: While the salmon bakes, heat a medium skillet over medium heat and toast the chopped pecans in ghee or olive oil until fragrant and lightly golden. Add the finely chopped fresh rosemary, maple syrup, orange juice, mustard, and salt. Bring the mixture to a gentle simmer and stir occasionally until the glaze thickens slightly enough to coat the back of a spoon.
  5. Glaze and garnish: Once the salmon is cooked, spoon the warm maple pecan glaze generously over each fillet. Garnish with fresh rosemary sprigs and orange slices if desired for a colorful and aromatic presentation.
  6. Serve: Serve immediately and enjoy with your choice of favorite sides such as mashed potatoes or roasted vegetables.

Notes

  • Baking salmon at 400°F provides a nice crust without drying out the fish.
  • Do not cover the salmon while baking to maintain a crispy exterior.
  • Garnishing with fresh rosemary and orange slices adds both visual appeal and complementary flavors.
  • You can substitute ghee with olive oil to keep the recipe dairy free.
  • Maple syrup and orange juice add natural sweetness balanced by the mustard and rosemary.
  • Center-cut salmon fillets ensure even cooking thickness.
  • Toast pecans carefully to avoid burning and bring out their nutty flavor.
