Instructions

  1. Prepare the Dough: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy using a hand mixer or stand mixer on medium speed. Add the vanilla extract and mix to combine. Gradually add the all-purpose flour and mix on low speed until just combined and dough forms.
  2. Form the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch (2.5cm) balls and place them evenly spaced on the prepared baking sheet. Use your thumb or the back of a teaspoon to gently press a small indentation into the center of each cookie ball, creating a well for the jam.
  3. Fill with Jam: Carefully spoon about 1/2 teaspoon of your chosen jam into each indentation, taking care not to overfill to avoid spilling during baking.
  4. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges of the cookies are lightly golden and the jam is set. Keep an eye on them to prevent burning.
  5. Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This helps them firm up and maintain shape.
