Cookie Dough

- 2/3 cup (133g) granulated sugar
- 2 cups (240g) all-purpose flour
- 1 teaspoon vanilla extract
Filling
- 1/3 cup (100g) fruit jam (such as raspberry, strawberry, or apricot)
- Prepare the Dough: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy using a hand mixer or stand mixer on medium speed. Add the vanilla extract and mix to combine. Gradually add the all-purpose flour and mix on low speed until just combined and dough forms.
- Form the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch (2.5cm) balls and place them evenly spaced on the prepared baking sheet. Use your thumb or the back of a teaspoon to gently press a small indentation into the center of each cookie ball, creating a well for the jam.
- Fill with Jam: Carefully spoon about 1/2 teaspoon of your chosen jam into each indentation, taking care not to overfill to avoid spilling during baking.
