  • 3 cups all purpose flour

  • 1 tsp dried rosemary
  • 1 tsp dried oregano

For the Filling

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Activate Yeast: In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5 minutes until it becomes foamy, indicating the yeast is active.
  2. Make Dough: Add olive oil, salt, dried rosemary, dried oregano, and all purpose flour to the yeast mixture. Mix until a rough dough forms.
  3. Knead Dough: Transfer the dough onto a floured surface and knead for 8 minutes until it is smooth, elastic, and no longer sticky.
  4. First Rise: Place the dough into a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until it has doubled in size.
  5. Shape and Fill: Punch down the risen dough to release air. Roll it out into a rectangular shape on a floured surface. Evenly sprinkle shredded mozzarella and grated parmesan cheese over the dough.
  6. Roll Up: Starting from one edge, roll the dough tightly into a log shape. Place the rolled dough seam side down onto a greased baking sheet.
  7. Second Rise: Cover the dough again and let it rise for 30 minutes to become puffy.
  8. Bake: Preheat the oven to 375°F (190°C). Bake the bread for 25 to 30 minutes until the top is golden brown and the bread sounds hollow when tapped.
  9. Cool and Serve: Remove from oven and let the bread cool slightly on a wire rack before slicing to serve.
