Cookie Dough

  • 100 g Butter (3.5 oz), room temperature
  • 90 g Sugar (3.1 oz), white (½ cup)
  • 175 g Flour (6.1 oz), all-purpose (1.4 cups)
  • 2 tsp Vanilla powder or Vanilla extract
  • ½ tsp Baking powder
  • 3 tbsp Honey (or 2 tbsp Golden Syrup for toffee flavor)

Instructions

  1. Preheat the oven: Preheat your oven to 180°C (356℉) to make sure it’s at the right temperature when you start baking the cookies.
  2. Mix butter and sugar: In a mixing bowl, combine the softened butter and white sugar. Cream them together until the mixture is smooth and fluffy.
  3. Add remaining ingredients: Add the flour, vanilla powder or extract, baking powder, and honey or golden syrup to the butter and sugar mixture. Blend well to form a consistent dough.
  4. Divide the dough: Separate the dough evenly into three parts to prepare for shaping.
  5. Shape into rolls: Roll each portion of dough into a log shape. Place the rolls on a baking tray lined with non-stick baking paper, leaving enough space between each since they will spread while baking.
  6. Flatten rolls: Gently press each dough roll with your finger to slightly flatten them and help the cookies bake evenly.
  7. Bake the cookies: Place the tray in the oven and bake for 12-14 minutes or until the cookies turn golden around the edges.
  8. Cut while warm: Remove the tray from the oven, and while the rolls are still warm, carefully slice them diagonally to form individual cookies. This is important because the dough is easier to cut when warm.
  9. Cool down: Allow the cookies to cool completely on a wire rack before serving, so they set properly and develop their characteristic texture.
