Instructions

  1. Blend the eggs: Add 4 eggs, ½ cup liquid egg whites, and ½ cup cottage cheese to a blender. Blend until the mixture is smooth and frothy to ensure fluffy scrambled eggs.
  2. Scramble: Heat 1 teaspoon of olive oil or butter in a medium skillet over medium-low heat. Pour in the blended egg mixture, season with salt, and cook gently, stirring constantly until the eggs are soft and fluffy, about 5 to 7 minutes. Remove from heat to avoid overcooking.
  3. Assemble: Lay out the 4 whole wheat tortillas on a flat surface. Divide the scrambled eggs evenly, placing the same amount on each tortilla. Top each with ¼ cup black beans and ¼ cup shredded cheddar cheese.
