Ingredients

Scale

Chicken and Cheese

  • 4 boneless, skinless chicken breasts
  • 1 package (5.2 oz) Boursin cheese (any flavor)

Herb-Crust Mixture

  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Others

  • 1 tablespoon olive oil
  • 2 tablespoons melted butter

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F (190°C) and lightly grease a baking dish large enough to hold the chicken breasts in a single layer.
  2. Mix breadcrumb herb coating: In a shallow bowl, combine panko breadcrumbs, grated Parmesan cheese, chopped parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper, stirring well to distribute.
  3. Create pockets in chicken: Slice a small pocket into the thickest part of each chicken breast carefully, avoiding cutting all the way through the meat.
  4. Stuff chicken with cheese: Fill each chicken pocket with about 1-2 tablespoons of Boursin cheese, pressing the cheese compactly inside.
  5. Secure stuffing: If needed, use toothpicks to seal the opening of each chicken breast to prevent the cheese from leaking during baking.
  6. Coat chicken with herbs: Brush the tops of the stuffed chicken breasts with olive oil, then dip and press both sides into the breadcrumb herb mixture until well coated.
  7. Arrange and add butter: Place the coated chicken breasts in the prepared baking dish in a single layer and drizzle melted butter over the top for extra richness.
  8. Bake until cooked: Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden and crispy.
  9. Rest and serve: Remove from the oven and let the chicken rest for a few minutes before removing toothpicks and serving to allow juices to redistribute.

Notes

  • You can customize the Boursin cheese flavor to your preference – garlic & herb works beautifully.
  • Use a meat thermometer to ensure the chicken is fully cooked but not overdone.
  • Fresh herbs yield the best flavor, but dried herbs can be substituted in a pinch (reduce quantity to about 1 teaspoon each).
  • Remove toothpicks carefully before serving to avoid any choking hazards.
  • Leftovers keep well in the refrigerator for 2-3 days and reheat nicely in the oven or air fryer.
