Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, carrots, and celery. Cook while stirring frequently until the vegetables are softened and fragrant, about 5-7 minutes.
  2. Add Main Ingredients: Stir in the diced potatoes, cooked lentils, vegetable broth, tomato paste, and thyme. Mix well to combine all ingredients evenly in the pot.
  3. Simmer the Stew: Bring the stew to a boil. Once boiling, reduce the heat to low and let it simmer gently for 20 to 25 minutes, or until the potatoes are tender and the flavors have melded together.
