Instructions

  1. Prepare the base: Heat olive oil in a large pot over medium heat. Sauté the diced onion, minced garlic, diced carrots, and diced celery until they become soft and fragrant, about 5-7 minutes.
  2. Add main ingredients: Stir in the diced potatoes, cooked lentils, vegetable broth, tomato paste, and thyme. Mix well to combine all flavors.
  3. Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 to 25 minutes, or until the potatoes are tender and the flavors have melded together.
