- Cook onions and celery: Add the diced onion and chopped celery to the pot. Cook them gently until they soften and become translucent, about 5 minutes, stirring occasionally.
- Sauté mushrooms: Add the thinly sliced mushrooms. Cook for about 7-8 minutes, stirring frequently, until the mushrooms release their moisture and turn golden brown.
- Add thyme and garlic: Stir in 2 teaspoons of fresh thyme and 4 crushed garlic cloves. Cook for 1-2 minutes until fragrant, making sure the garlic doesn’t burn.
- Add stock and cream: Pour in 6 cups of stock and 1 cup of cream. Stir well and bring to a gentle simmer. Let it cook for 5 minutes to blend the flavors.
- Add chicken and spinach: Stir in the shredded rotisserie chicken and chopped spinach. Simmer for another 5 minutes until the spinach wilts and the chicken is heated through.
