This hearty Rotisserie Chicken Mushroom Soup combines tender shredded chicken, earthy mushrooms, fresh spinach, and aromatic herbs in a creamy broth. Perfect for a comforting meal, it’s ideal for using leftover rotisserie chicken and can be prepared quickly to warm you up on chilly days.

Ingredients

Scale

Vegetables

  • 1 onion, diced
  • 2 celery sticks, finely chopped
  • 4 garlic cloves, crushed
  • 1 lb mushrooms, thinly sliced
  • 3 cups spinach, chopped

Proteins

  • 1 rotisserie chicken, shredded

Flavors & Herbs

  • 2 tsp fresh thyme
  • Pinch of chili flakes
  • Salt and pepper to taste

Liquids

  • 6 cups stock (chicken or vegetable)
  • 1 cup cream
  • Olive oil or butter for cooking (about 2 tbsp)

Instructions

  1. Heat oil or butter: In a large pot, warm 2 tablespoons of olive oil or butter over medium heat to prepare for sautéing the vegetables.
  2. Cook onions and celery: Add the diced onion and chopped celery to the pot. Cook them gently until they soften and become translucent, about 5 minutes, stirring occasionally.
  3. Sauté mushrooms: Add the thinly sliced mushrooms. Cook for about 7-8 minutes, stirring frequently, until the mushrooms release their moisture and turn golden brown.
  4. Add thyme and garlic: Stir in 2 teaspoons of fresh thyme and 4 crushed garlic cloves. Cook for 1-2 minutes until fragrant, making sure the garlic doesn’t burn.
  5. Add stock and cream: Pour in 6 cups of stock and 1 cup of cream. Stir well and bring to a gentle simmer. Let it cook for 5 minutes to blend the flavors.
  6. Add chicken and spinach: Stir in the shredded rotisserie chicken and chopped spinach. Simmer for another 5 minutes until the spinach wilts and the chicken is heated through.
  7. Season to taste: Add a pinch of chili flakes, salt, and pepper to taste. Optionally, squeeze a little lemon juice to brighten the flavor. Stir well before serving.

Notes

  • This soup is a great way to use leftover rotisserie chicken for a quick and satisfying meal.
  • You can substitute cream with coconut milk or a non-dairy alternative for a different flavor profile.
  • Adjust chili flakes to control the spice level to your preference.
  • For a thicker soup, allow it to simmer longer or add a slurry of cornstarch and water before the final simmer.
