Roasted Harissa Tomatoes

  • 2 cups cherry tomatoes
  • 1 tablespoon harissa paste
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Prepare the tomatoes: Preheat your oven to 400°F (200°C). In a bowl, toss the cherry tomatoes with harissa paste and olive oil until evenly coated. Spread the tomatoes on a baking sheet lined with parchment paper.
  2. Roast the tomatoes: Place the baking sheet in the preheated oven and roast the tomatoes for 15-20 minutes, or until they are soft and slightly caramelized.
  3. Prepare the couscous: While tomatoes roast, place couscous in a heatproof bowl, add salt to boiling water or broth, then pour over the couscous. Cover and let it sit for 5 minutes, then fluff with a fork.
  4. Combine and serve: Stir the roasted harissa tomatoes along with their juices into the couscous. Adjust seasoning with salt if needed and serve warm.
