Delicious and easy-to-make rice patties combining cooked rice, egg, cheese, and fresh herbs, pan-fried to a golden crisp. Perfect as a snack, side dish, or light meal.

Ingredients

Scale

Rice Patties

  • 2 cups cooked rice
  • 1 large egg
  • 1/2 cup shredded cheese (such as cheddar or mozzarella)
  • 2 tablespoons fresh herbs (such as parsley, chives, or cilantro), finely chopped
  • Salt and pepper, to taste
  • 2 tablespoons cooking oil (such as vegetable or olive oil), for frying

Instructions

  1. Prepare the mixture: In a large bowl, combine the cooked rice, egg, shredded cheese, and finely chopped fresh herbs. Add salt and pepper to taste. Mix everything thoroughly until well combined.
  2. Form the patties: Using your hands, shape the mixture into small, evenly sized patties, about 2-3 inches in diameter and 1/2 inch thick, pressing them gently to hold their shape.
  3. Heat the pan: Place a non-stick skillet or frying pan over medium heat and add the cooking oil. Allow the oil to heat until shimmering but not smoking.
  4. Cook the patties: Carefully place the rice patties into the hot pan, making sure not to overcrowd. Pan-fry for about 3-4 minutes on each side, or until each side is golden brown and crisp.
  5. Drain and serve: Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil. Serve warm as a snack or side dish.

Notes

  • You can customize the herbs and cheese according to your preference for different flavor profiles.
  • Make sure the rice is cooled or slightly dry to help the patties hold together better.
  • For a crispier texture, press the patties firmly before frying.
  • Leftover patties can be refrigerated and reheated in a skillet or oven.
