Filling and Topping

  • 1/2 cup butter, softened (salted or unsalted)
  • 1 pound mozzarella cheese, grated (freshly grated preferred)
  • 1 tsp garlic powder (adjust to taste)
  • 1 tsp parsley (chopped fresh or dried)
  • 1/2 cup melted butter (optional, for brushing tops)

Instructions

  1. Prepare the Dough: In a large glass bowl, combine 2 1/2 cups of flour, pizza crust yeast, salt, and sugar. Stir in warm water and olive oil until a soft dough begins to form. If the dough is too sticky, add additional flour 1 to 2 tablespoons at a time until it becomes workable and no longer sticks to your hands.
  2. Knead the Dough: Using a stand mixer with a dough hook, knead for 3-4 minutes. If kneading by hand, transfer dough to a lightly floured surface and knead for 4-6 minutes until smooth, elastic, and springy to the touch.
  3. Let Dough Rest: Cover the dough and let it rest for 10 minutes to relax the gluten for easier rolling.
  4. Preheat Oven and Roll Dough: Preheat your oven to 350°F (175°C). On a floured surface, roll the dough into an 18 x 12 inch rectangle. Evenly brush the softened butter over the dough surface.
  5. Add Filling: Sprinkle garlic powder evenly over the butter, followed by the grated mozzarella cheese and then the parsley, spreading uniformly across the dough.
  6. Form Rolls: Starting at the long edge, roll the dough tightly into a log. Cut the log into 12 equal rolls.
