Ingredients

Scale

Bread Base

  • 1 batch pizza dough (store-bought or homemade, approximately 2 cups all-purpose flour, 1 packet instant yeast, 1 tsp salt, ¾ cup warm water, 1 tbsp olive oil)
  • Or 1 loaf French bread or Italian bread, sliced open

Fillings

  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup crumbled feta cheese
  • 1 cup cooked leftover meats (ham, chicken, pepperoni, sausage, or bacon)
  • 1 cup chopped vegetables (bell peppers, onions, spinach, mushrooms)

Optional Ingredients

  • 1 tsp Italian seasoning or garlic powder
  • ½ cup marinara sauce or ranch dressing
  • 2 tbsp sun-dried tomatoes, chopped
  • Red pepper flakes, to taste
  • Olive oil or melted butter for brushing

Instructions

  1. Prepare the Dough: If using homemade dough, combine 2 cups all-purpose flour, 1 packet (2 ¼ teaspoons) instant yeast, and 1 teaspoon salt in a bowl. Add ¾ cup warm water and 1 tablespoon olive oil. Stir to form a dough. Knead on a floured surface for 5-10 minutes until smooth. Let it rise in a warm area for 1 hour until doubled in size.
  2. Roll Out Dough: After rising, roll the dough into a rectangular shape on a floured surface, about 12×9 inches, to hold your fillings.
  3. Assemble Fillings: Spread an even layer of your chosen cheeses, cooked meats, and vegetables over the dough. Sprinkle herbs, spices, and extras like sun-dried tomatoes or red pepper flakes as desired.
  4. Roll and Seal: Starting from one end, tightly roll the dough into a log shape, pinching the seams to seal it well to avoid filling leakage.
  5. Prepare for Baking: Place the rolled dough seam-side down on a parchment-lined baking sheet. Brush the top lightly with olive oil or melted butter for a golden crust.
  6. Bake: Preheat oven to 375°F (190°C). Bake the assembled garbage bread for 25-30 minutes, until the crust is golden brown and cooked through.
  7. Serve: Let the bread cool slightly before slicing. Serve warm with dips such as marinara sauce, ranch dressing, garlic butter, or your favorite sauces.

Notes

  • Feel free to experiment with different doughs like whole wheat or gluten-free flour blends.
  • Season your fillings with salt, pepper, and herbs to enhance flavors.
  • Garbage bread freezes well; wrap tightly and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
  • Customize fillings based on dietary preferences or leftovers you have on hand.
  • If assembling ahead, store unbaked bread in the fridge for up to 2 days; allow to come to room temperature before baking and adjust bake time accordingly.
