  • 1 cup Unsalted butter, melted and cooled
  • 1 cup Brown sugar, packed (light or dark)
  • 1/2 cup White granulated sugar
  • 2 Large eggs, room temperature
  • 1 Egg yolk, room temperature
  • 1 tsp Pure vanilla extract
  • 2 3/4 cups All-purpose flour
  • 3/4 cup Unsweetened cocoa powder
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • 2 cups Oreo crumbs, blended into a fine crumb, filling reserved

Chocolate Pudding Mousse

  • 3.4 oz Chocolate instant pudding mix
  • 2/3 cup Milk
  • 1 1/2 cups Heavy cream
  • 2/3 cup Powdered sugar
  • 1/8 cup Unsweetened cocoa powder
  • 1 tsp Pure vanilla extract

Whipped Cream

  • 1/2 cup Heavy cream
  • 1 TBSP Powdered sugar
  • 1 tsp Pure vanilla extract
  • Chocolate curls (optional, for decoration)

Instructions

  1. Prepare the Chocolate Oreo Cookie dough: Using a mixer, beat the melted and cooled butter, brown sugar, and white sugar on high speed for 2 minutes until creamy. Add the eggs, egg yolk, and vanilla extract, mixing until fully combined. Sift together the flour, cocoa powder, baking powder, baking soda, and salt, then add to the wet ingredients. Finally, mix in the Oreo crumbs on low speed just until combined to form a thick dough.
  2. Shape and bake the cookies: Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper. Let the dough rest for 10 minutes. Using a large cookie scoop (2 oz or 2 tablespoons), scoop 6 dough balls per sheet. Bake one sheet at a time for 11 minutes. Then, press a 1/4 cup measuring cup gently into each cookie and bake for an additional 2 minutes. Press the measuring cup again after baking and let the cookies sit for 5 minutes before transferring to a wire rack to cool completely.
  3. Make the Chocolate Pudding Mousse: Chill a metal mixing bowl and whisk attachment in the freezer for 10 minutes. Pour heavy cream, powdered sugar, cocoa powder, and vanilla extract into the cold bowl. Beat on high speed until stiff peaks form. In a separate bowl, whisk the chocolate instant pudding mix with milk until smooth and let it set for 2 minutes. Gently fold the pudding mixture into the whipped cream with a rubber spatula until well combined. Adjust thickness with additional milk if needed. Keep refrigerated until assembly.
  4. Prepare the Whipped Cream: Chill a metal bowl and whisk attachment for 10 minutes. Add heavy cream, powdered sugar, and vanilla extract to the cold bowl. Beat on high speed until medium peaks form. This whipped cream will be used as a topping.
  5. Assemble the Cookies: Using a small cookie scoop (1 oz or 1 tablespoon), fill the indentation in each cooled cookie with a dollop of chocolate pudding mousse and smooth it out evenly. Then, add a dollop of whipped cream on top, slightly offset from the center, and gently swirl it with a butter knife. Optionally, decorate with chocolate curls. Store the finished cookies in the refrigerator to allow the filling to thicken and the flavors to meld.

Notes

  • Use light or dark brown sugar based on your preference for richer or milder flavor.
  • For accurate flour measurement, spoon and level the flour or weigh with a kitchen scale to prevent dry cookies.
  • If baking at high altitude, add 2 additional tablespoons of flour for best texture.
  • Bring all dairy ingredients to room temperature two hours before baking to ensure proper mixing and texture.
  • Store cookies in the refrigerator so the filling stays firm and fresh.
  • This recipe yields a dense chocolate cookie with rich mousse, perfect for special occasions or chocolate lovers.
