Instructions

  1. Preheat oven. Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Caramelize onions. In a skillet over medium heat, melt the butter. Add the thinly sliced onions and sauté for 10–12 minutes, stirring often, until they turn golden brown and caramelized. Set aside.
  3. Prepare casserole mix. In a large bowl, combine the uncooked rice, French onion soup, cream of chicken soup, milk, salt, and black pepper. Mix until well incorporated.
  4. Add chicken and cheese. Stir the cooked shredded chicken and half of the shredded cheese into the soup and rice mixture.
  5. Assemble casserole. Pour the mixture into the greased baking dish and spread it evenly. Sprinkle the caramelized onions over the top, followed by the remaining cheese.
  6. Bake covered. Cover the dish tightly with aluminum foil and bake in the preheated oven for 45 minutes to cook the rice and blend flavors.
  7. Finish baking uncovered. Remove the foil and bake for an additional 10–15 minutes until the cheese is melted, bubbly, and slightly golden, and the rice is tender.
  8. Garnish and serve. Let the casserole rest for a few minutes, then garnish with fresh thyme or parsley if desired. Serve warm and enjoy!
