  • 1 loosely packed cup scallions, chopped

Instructions

  1. Prepare butter milk mixture: In a small saucepan or microwave, melt 2 tablespoons butter over low heat. Add ½ cup milk, 1 tablespoon sugar, and 1 teaspoon kosher salt. Stir to combine, then remove from heat and let cool until just warm. Transfer this mixture to a large mixing bowl.
  2. Make the dough: Add 1 large egg, 1 teaspoon yeast, 2 cups all-purpose flour, and 1 tablespoon potato flour if using to the milk mixture. Mix thoroughly to form a dough. Turn dough onto a clean surface and knead for about 5 minutes until smooth and slightly tacky. Add flour 1 tablespoon at a time if dough is too sticky.
  3. First rise: Lightly oil the mixing bowl and place the dough ball inside. Cover and let it rise in a warm spot for about 90 minutes, or until puffed but not doubled in size.
