Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the lime juice, orange juice, olive oil, minced garlic, ground cumin, dried oregano, salt, black pepper, and crushed red pepper flakes if using, to create a flavorful citrus marinade.
  2. Marinate the Chicken: Place the chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours to allow the flavors to fully penetrate.
  3. Preheat the Oven: Set your oven to 400°F (200°C) to get it ready for roasting the chicken.
  4. Bake the Chicken: Remove the chicken thighs from the marinade and arrange them skin-side up on a baking sheet lined with parchment paper. Discard any leftover marinade to avoid contamination.
  5. Roast in the Oven: Roast the chicken for 35-40 minutes, or until the skin is golden and crispy and the internal temperature reaches 165°F (75°C) when checked with a meat thermometer.
