Ingredients

Scale

Main Ingredients

  • 2 pounds ground beef
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, pressed
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, with liquid
  • 1 can (15 oz) pinto beans, with liquid

Spices and Seasonings

  • 1 tablespoon hot sauce
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin

Instructions

  1. Prepare the Chili Seasoning: In a small bowl, combine the chili powder, salt, dried basil, oregano, parsley, black pepper, and cumin. Mix well to create the chili seasoning blend.
  2. Brown the Ground Beef: Heat a skillet over medium heat. Add the ground beef and use a spatula to break it up as it cooks. Cook until the beef is fully browned and no longer pink, about 7-10 minutes. Drain excess fat and liquid thoroughly.
  3. Combine Ingredients in Crock Pot: Transfer the browned beef to the crock pot. Add diced onion, green bell pepper, pressed garlic, tomato sauce, diced tomatoes, kidney beans (with liquid), pinto beans (with liquid), hot sauce, and the chili seasoning blend. Stir everything until well combined.
  4. Cook the Chili: Cover the crock pot with its lid and cook on the low setting for 3 to 8 hours. The longer cooking time allows flavors to meld beautifully. Check occasionally and stir if desired.
  5. Serve: Once cooked, serve the chili hot. Customize with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or fresh cilantro.

Notes

  • No need to drain the beans; include them with their liquid for added flavor and texture.
  • For a spicier chili, add more hot sauce or some cayenne pepper.
  • This chili tastes even better the next day as flavors continue to develop.
  • You can substitute ground turkey or chicken for a leaner option.
  • Serve with cornbread or over rice for a complete meal.
