Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth

Toppings

  • 2 cups frozen mixed vegetables
  • 1 box (6 oz) stuffing mix

Instructions

  1. Prepare the Crock Pot: Spray the inside of the crock pot with non-stick cooking spray to prevent sticking. Place the chicken breasts in a single layer at the bottom of the crock pot for even cooking.
  2. Season the Chicken: Sprinkle the chicken breasts evenly with garlic powder, dried thyme, salt, and pepper to infuse the meat with flavor.
  3. Make the Sauce: In a medium bowl, whisk together the cream of chicken soup, sour cream, and low-sodium chicken broth until the mixture is smooth and well combined.
  4. Assemble Layers: Pour and spread the creamy soup mixture evenly over the seasoned chicken breasts. Then, layer the frozen mixed vegetables on top of the sauce.
  5. Add Stuffing: Sprinkle the stuffing mix evenly over the vegetables. Using the back of a spoon, gently press the stuffing down to compact it slightly without crushing the chicken underneath.
  6. Cook: Cover the crock pot with its lid and cook on low heat for 6 hours. The chicken should be fully cooked and the stuffing tender by the end of this time.
  7. Serve: Carefully remove the crock pot lid, scoop portions onto plates, and serve warm for a comforting meal.

Notes

  • Ensure chicken is cooked to an internal temperature of 165°F for safety.
  • You can substitute the mixed vegetables with your favorite frozen vegetable blend.
  • For a dairy-free version, substitute sour cream with a dairy-free alternative.
  • If using a larger crock pot, cooking times may slightly vary.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
