Instructions

  1. Prepare the Cheese Sticks: Cut the low moisture mozzarella into uniform sticks about 3 to 4 inches long and 1/2 inch thick for even cooking and easy frying.
  2. Make the Flour Paste: In a bowl, whisk together the flour, salt, and cold water to create a smooth batter without lumps. This paste will help the breading adhere to the cheese.
  3. Season the Panko Breadcrumbs: Combine panko, dried oregano, dried basil, chili flakes (if using), garlic powder, onion powder, and black pepper in a shallow dish. Mix well to evenly distribute the spices.
  4. Coat the Cheese Sticks: Dip each mozzarella stick first into the flour paste, ensuring it is fully covered, then coat thoroughly with the seasoned panko breadcrumbs. For extra crunch and secure coating, repeat the dipping in flour paste and panko breadcrumbs a second time.
  5. Freeze the Sticks: Arrange the coated mozzarella sticks on a baking sheet in a single layer and freeze them for at least 1 hour. This step prevents the cheese from melting too quickly during frying.
  6. Heat the Oil: In a deep fryer or a heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Use enough oil to completely submerge the sticks for even frying.
  7. Deep Fry: Carefully add the frozen mozzarella sticks to the hot oil in batches, frying for 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.
