Instructions

  1. Grate Vegetables: Peel and grate the butternut squash and potato, then set aside.
  2. Mix Fritter Batter: In a large bowl, combine the grated butternut squash and potato with eggs, all-purpose flour, cornstarch, shredded cheddar cheese, chopped parsley, smoked paprika, ground cumin, salt, and pepper. Stir until all ingredients are evenly incorporated.
  3. Heat Oil: Heat vegetable oil in a large skillet over medium heat until hot but not smoking.
