Ingredients

Scale

Pastry and Cheese

  • 1 sheet puff pastry, thawed
  • 8 ounces Brie cheese, sliced

Fillings

  • 1 cup cranberry sauce (homemade or store-bought)
  • 4 ounces pancetta, diced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper, to taste

Finishing

  • 1 egg, beaten (for egg wash)
  • Fresh thyme sprigs, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry to smooth out any creases and slightly enlarge it. Transfer the pastry to the prepared baking sheet.
  3. Cook Pancetta: In a skillet over medium heat, cook the diced pancetta until it becomes crispy and browned. Remove from heat and drain excess fat on paper towels.
  4. Spread Cranberry Sauce: Evenly spread the cranberry sauce over the puff pastry, leaving a 1-inch border around the edges to create a rustic tart appearance.
  5. Add Brie and Toppings: Layer the sliced Brie cheese over the cranberry sauce, then sprinkle the crispy pancetta and fresh thyme leaves evenly on top. Season with salt and pepper to taste.
  6. Fold Edges and Apply Egg Wash: Fold the edges of the pastry over the filling, creating a rustic border. Brush the folded edges with the beaten egg to achieve a golden brown color while baking.
  7. Bake: Place the tart in the preheated oven and bake for 20-25 minutes, or until the puff pastry is golden and flaky.
  8. Garnish and Serve: Remove the tart from the oven, garnish with fresh thyme sprigs, and allow it to cool for a few minutes before slicing and serving warm or at room temperature.

Notes

  • For a vegetarian option, omit the pancetta or substitute it with toasted walnuts or pecans for added texture.
  • Try substituting cranberry sauce with fig or apricot preserves for a different flavor profile.
  • Serve the tart slightly warm to enjoy the melty Brie, though it is also enjoyable at room temperature.
