Ingredients

Scale

Base Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/4 cup milk (dairy or non-dairy)

Seasonings

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Optional Vegetables

  • 1/4 cup spinach, chopped (optional)
  • 1/4 cup bell pepper, diced (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with paper liners to prevent sticking.
  2. Mix Ingredients: In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, milk, garlic powder, onion powder, salt, and pepper until the mixture is smooth and fully combined.
  3. Add Optional Vegetables: Stir in any optional ingredients such as chopped spinach or diced bell peppers to add flavor and nutrition.
  4. Fill Muffin Cups: Pour the egg mixture evenly into the muffin cups, filling each about three-quarters full to allow room for expansion during baking.
  5. Bake: Bake in the preheated oven for 18 to 20 minutes, or until the egg bites are set and lightly golden on top. Check doneness by inserting a toothpick into the center; it should come out clean.
  6. Cool and Serve: Allow the egg bites to cool slightly before removing them from the tin. Serve warm or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • For a smoother texture, blend the eggs and cottage cheese before adding in other ingredients.
  • Use a silicone muffin tray to make removing the egg bites easier and reduce the need for grease or liners.
  • Don’t overfill the muffin cups to prevent overflow during baking.
  • Check for doneness starting at 18 minutes to avoid overbaking and drying out the bites.
  • Cool completely before storing to prevent condensation and sogginess.
  • Egg bites can be frozen: freeze individually on a baking sheet, then store in a freezer-safe bag; reheat in 30-second intervals until warm.
