Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly and line it with parchment paper to ensure easy removal after baking.
  2. Make the Cinnamon Sugar Swirl: In a small bowl, combine the granulated sugar and ground cinnamon until well mixed. Set this mixture aside to be used later for layering the batter.
  3. Whisk Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and packed brown sugar until evenly blended.
  4. Whisk Wet Ingredients: In a separate medium bowl, whisk the apple butter, Greek yogurt (or sour cream), eggs, vegetable oil (or melted coconut oil), and vanilla extract until the mixture is smooth and homogenous.
  5. Combine Wet and Dry: Gently fold the wet mixture into the dry ingredients using a spatula or wooden spoon, mixing just until combined to avoid overdeveloping gluten which can make the bread dense.
  6. Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar swirl mixture evenly over the batter. Pour the remaining batter on top, then sprinkle the rest of the cinnamon sugar. Use a knife or skewer to swirl the cinnamon sugar through the batter gently, creating a marbled effect.
