This Christmas Toffee Crunch Cake is a festive dessert featuring a moist baked cake topped with crunchy toffee bits and rich chocolate ganache, finished with a smooth layer of cream for a delightful holiday treat.

Ingredients

Scale

Cake

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Toffee Crunch Topping

  • 1 cup toffee bits
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter (optional, for ganache)

Cream Topping

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a mixing bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. In a separate bowl, whisk together flour, baking powder, and salt. Alternate adding the dry ingredients and milk to the wet mixture, starting and ending with dry ingredients. Mix until smooth.
  2. Bake the Cake: Grease and flour a 9-inch round cake pan. Pour the batter evenly into the pan. Bake for about 35-40 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool completely on a wire rack.
  3. Make the Chocolate Ganache: In a small saucepan, heat heavy cream until it just begins to simmer. Pour over chocolate chips in a heatproof bowl and let sit for 2 minutes. Stir gently until smooth and glossy, adding butter if desired for extra shine. Let the ganache cool slightly but remain pourable.
  4. Assemble the Toffee Crunch Topping: Once the cake is cooled, pour the warm ganache over the cake, spreading it evenly. Immediately sprinkle the toffee bits generously over the ganache so they stick as it sets.
  5. Prepare the Cream Topping: Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread or pipe the whipped cream over the set ganache and toffee layer, or serve alongside the cake as a creamy complement.
  6. Serve: Slice the cake carefully and serve at room temperature for the best texture and flavor balance of moist cake, crunchy toffee, rich chocolate, and smooth cream.

Notes

  • Toffee bits can sometimes melt quickly; add them immediately after spreading the ganache for best results.
  • If you prefer a less sweet dessert, adjust the sugar in the cake or toppings accordingly.
  • For easier slicing, chill the cake briefly after assembling, but allow it to come to room temperature before serving.
  • Use high-quality chocolate for a richer ganache flavor.
  • This cake can be made a day ahead and stored in the refrigerator, covered tightly.
