Ingredients

Scale

Marinade & Chicken

  • 2 large chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Base

  • 1 ½ cups cooked rice or quinoa (or cauliflower rice for low-carb option)

Fresh Vegetables & Toppings

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and halved
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons hummus (optional)

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ½ cup grated cucumber, well-drained
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • Pinch of salt

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts, coating them thoroughly with the marinade. Cover and let the chicken absorb the flavors for at least 20 minutes, or up to 8 hours in the refrigerator for best results.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for 5 to 6 minutes on each side until a golden crust forms and the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
  3. Make the Tzatziki Sauce: In a small bowl, combine Greek yogurt, well-drained grated cucumber, lemon juice, minced garlic, fresh dill, and a pinch of salt. Stir thoroughly and refrigerate until ready to serve to develop flavors and maintain cool creaminess.
  4. Prepare Fresh Ingredients: Chop cherry tomatoes, dice cucumber, thinly slice red onion, and prepare Kalamata olives and crumbled feta. If using, have hummus and chopped fresh parsley ready for garnish.
  5. Assemble the Bowls: Divide the cooked rice or quinoa evenly among serving bowls. Top each with sliced grilled chicken, tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Add generous dollops of tzatziki sauce and hummus if desired. Sprinkle fresh parsley over the top for a vibrant finish, then serve immediately.

Notes

  • Chicken thighs can be substituted for breasts but may require longer cooking time.
  • For a dairy-free tzatziki, replace Greek yogurt with unsweetened dairy-free yogurt.
  • Use cauliflower rice as a low-carb or gluten-free base alternative.
  • Store components separately in airtight containers for up to 4 days in the fridge to maintain freshness.
  • Cooked chicken and grains freeze well for up to 3 months; avoid freezing fresh veggies and tzatziki sauce.
  • Reheat chicken and grains gently and add cold toppings and tzatziki just before serving for best texture and flavor contrast.
  • Pair with warm pita or a crisp green salad for a complete meal experience.
