Instructions

  1. Prepare the potatoes. Wash and dry the russet potatoes thoroughly. Prick each potato a few times with a fork to allow steam to escape during cooking.
  2. Air fry the potatoes. Place the potatoes in the air fryer basket and cook at 400°F (200°C) for 35-40 minutes or until the skins are crispy and a fork can easily pierce through the potatoes.
  3. Halve and scoop. Remove the potatoes from the air fryer and let them cool slightly. Cut each potato in half lengthwise and carefully scoop out the fluffy insides, leaving about 1/4 inch of potato around the skin to maintain structure.
  4. Make the filling. In a bowl, combine the scooped-out potato flesh with butter, sour cream, shredded cheese, salt, and pepper. Mix well until creamy and smooth.
  5. Fill the potato skins. Spoon the cheesy potato mixture back into the potato skins, dividing it evenly among the halves.
  6. Air fry again. Place the filled potatoes back into the air fryer basket. Cook at 375°F (190°C) for another 8-10 minutes, or until the cheese is melted and the tops are slightly golden.
  7. Serve. Carefully remove the twice-baked potatoes from the air fryer and serve hot as a delicious side or comforting snack.
