Cheddar Bay Biscuit Seafood Pot Pie is a comforting and flavorful dish combining succulent shrimp and langostino in a creamy herb-infused gravy, topped with the famous cheesy Cheddar Bay Biscuit mix for a hearty and satisfying meal.

Ingredients

Scale

Seafood and Vegetables

  • 1 lb shrimp, peeled and deveined
  • 12 oz langostino or lobster
  • 1 cup onion, chopped
  • ½ cup bell pepper, chopped

Gravy

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp butter
  • 5 tbsp flour
  • 1 tbsp garlic, minced
  • 1 tsp thyme
  • 1 tsp tarragon

Biscuit Topping

  • 1 box Cheddar Bay Biscuit mix
  • ¾ cup milk
  • ½ cup shredded cheddar cheese
  • ¼ cup melted butter

Instructions

  1. Cook Seafood: Cook the peeled and deveined shrimp along with the langostino or lobster in a skillet until just done, then set aside.
  2. Sauté Vegetables: In the same skillet, sauté the chopped onions and bell peppers until they become soft and fragrant, usually around 5 minutes.
  3. Make Gravy: Melt butter in the skillet, then whisk in flour and cook briefly to make a roux. Gradually add chicken broth and heavy cream, whisking until the mixture thickens to a creamy consistency. Stir in minced garlic, thyme, and tarragon to season.
  4. Combine Seafood and Gravy: Add the cooked shrimp and langostino or lobster to the gravy mixture, stirring well to coat everything evenly.
  5. Prepare Biscuit Topping: In a mixing bowl, combine the Cheddar Bay Biscuit mix with milk and shredded cheddar cheese, mixing until just combined to avoid overmixing, keeping the dough light and fluffy.
  6. Assemble and Bake: Pour the seafood and gravy filling into a baking dish or individual ramekins. Spread the biscuit dough evenly over the top. Brush with melted butter for extra flavor. Bake at 425°F (220°C) for 14-16 minutes until the biscuit topping is golden and cooked through.

Notes

  • Do not overmix the biscuit dough to ensure soft and fluffy biscuits.
  • Add garlic herb butter on top of biscuits before baking for extra flavor.
  • Frozen seafood may be used but should be thawed completely before cooking.
  • This dish is calorie-dense and best enjoyed occasionally.
  • Vegetarian version can be made by substituting seafood with mushrooms, potatoes, and carrots.
  • To add a spicy kick, include cayenne pepper in the gravy.
  • You can prepare the filling and biscuit topping ahead of time; assemble and bake when ready.
