Instructions

  1. Caramelize the Onions: Heat olive oil in a skillet over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly for 20 to 25 minutes, stirring frequently, until the onions turn a deep golden brown and become sweet and caramelized. Stir in the thyme leaves at the end, then remove from heat and set aside.
  2. Prepare the Bread: Butter one side of each slice of bread evenly. Place two slices, buttered side down, onto a clean skillet or griddle over medium heat.
  3. Assemble the Sandwiches: On the unbuttered side of the bread in the pan, evenly layer half of the grated Gruyère cheese, followed by the thin apple slices and the caramelized onions. Sprinkle with a little salt and pepper to taste. Top with the remaining cheese, then place the remaining bread slices on top, buttered side up.
  4. Grill the Sandwich: Cook over medium heat for about 3 to 4 minutes on one side, until the bread is golden brown and the cheese begins to melt. Carefully flip the sandwich and cook the other side for another 3 to 4 minutes until the cheese is fully melted and the bread is crispy and browned.
