Blueberry Compote
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional)
- 1 tbsp water (for dissolving cornstarch, optional)
Yogurt Mixture
- 1 cup Greek yogurt
- 1/2 tsp vanilla extract
- Additional honey or maple syrup to taste (optional)
- Prepare Blueberry Compote: In a small saucepan over medium heat, combine blueberries, honey, and lemon juice. Simmer for 5 minutes until the blueberries soften and release their juices.
- Thicken Compote (Optional): If using cornstarch, dissolve it in 1 tablespoon of water, then stir the mixture into the saucepan. Cook for another minute until the compote thickens. Remove from heat and let cool completely.
- Mix Yogurt Base: In a mixing bowl, combine Greek yogurt and vanilla extract. Stir until smooth. Taste and add more honey or maple syrup if additional sweetness is desired.
- Fill Molds: Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
- Add Blueberry Swirl: Place a spoonful of the cooled blueberry compote on top of each yogurt portion. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled effect.
- Freeze: Place the molds in the freezer and freeze for at least 3 hours until the yogurt bites are solid.
- Serve and Store: Carefully remove frozen yogurt bites from the molds. Store them in an airtight container in the freezer. Let them sit at room temperature for 2–3 minutes before eating for the best creamy texture.
Notes
- You can substitute maple syrup for honey to make this recipe vegan.
- Cornstarch is optional but helps thicken the compote for a better swirl.
- If you don’t have silicone molds, mini muffin tins work well—consider lining with paper liners.
- Adjust sweetness according to your taste, especially if using tart Greek yogurt.
- Letting the bites sit briefly after freezing enhances the creamy mouthfeel.
