Instructions

  1. Combine Ingredients: In a medium heavy-bottomed saucepot, combine the fresh blueberries, granulated sugar, fresh lime juice, and lime zest. Stir to mix all ingredients evenly.
  2. Bring to Boil: Place the pot over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent sticking and burning. Once boiling, reduce the heat to medium to maintain a gentle boil.
  3. Simmer Until Thickened: Place a few metal spoons in the freezer while the jam cooks. Continue heating the mixture on medium for 15 to 25 minutes, stirring occasionally. During this time, the blueberries will break down and the mixture will start to thicken.
  4. Test for Doneness: Remove a metal spoon from the freezer and dip it into the hot jam. Lift the spoon and observe how the jam falls off. The jam is done when it falls off slowly in one thickened mass. If it falls off quickly or is too runny, cook the jam for another 5 minutes and test again.
  5. Cool and Store: Once the jam has reached the desired consistency, transfer it carefully into heat-proof, airtight containers or jars. Leave the jars uncovered at room temperature until the jam cools completely. Then cover them tightly and store the jam in the refrigerator for up to two weeks.
