Beef Mixture
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 cup enchilada sauce (half of total)
Assembly
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup enchilada sauce (remaining half)
Serving
- ½ cup sour cream (for serving)
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish to prevent sticking.
- Sauté Onions: In a skillet over medium heat, sauté the chopped onions for about 5 minutes until they become soft and translucent.
- Cook Beef: Add the ground beef to the skillet and cook thoroughly, breaking it into small crumbles until browned, about 7 to 10 minutes.
- Season Beef Mixture: Stir in the ground cumin, chili powder, and half of the enchilada sauce until the mixture is well combined and flavorful.
- Assemble Enchiladas: Spoon the beef mixture evenly onto each tortilla, roll them tightly, and place each seam-side down in the prepared baking dish.
- Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the shredded cheddar cheese evenly on top.
- Bake: Bake uncovered in the preheated oven for 20 to 25 minutes, or until the cheese is melted, bubbly, and starting to brown.
- Serve: Serve hot with a dollop of sour cream on the side for a creamy finish.
Notes
- For extra spice, add diced jalapeños into the beef mixture.
- Substitute ground beef with ground turkey or use black beans for a vegetarian variation.
- Warm the tortillas briefly in the microwave before filling to prevent tearing when rolling.
