  • 1 cup enchilada sauce (half of total)

Assembly

  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce (remaining half)

  • ½ cup sour cream (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish to prevent sticking.
  2. Sauté Onions: In a skillet over medium heat, sauté the chopped onions for about 5 minutes until they become soft and translucent.
  3. Cook Beef: Add the ground beef to the skillet and cook thoroughly, breaking it into small crumbles until browned, about 7 to 10 minutes.
  4. Season Beef Mixture: Stir in the ground cumin, chili powder, and half of the enchilada sauce until the mixture is well combined and flavorful.
  5. Assemble Enchiladas: Spoon the beef mixture evenly onto each tortilla, roll them tightly, and place each seam-side down in the prepared baking dish.
  6. Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the shredded cheddar cheese evenly on top.
  7. Bake: Bake uncovered in the preheated oven for 20 to 25 minutes, or until the cheese is melted, bubbly, and starting to brown.
  8. Serve: Serve hot with a dollop of sour cream on the side for a creamy finish.
