Ingredients

Scale

For the Bowl:

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce (alcohol-free)
  • 1 cup cooked brown rice or quinoa
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving

For the Creamy Garlic Yogurt Sauce (Optional but Yum!):

  • 1/2 cup plain Greek yogurt
  • 1 small garlic clove, minced
  • Juice of 1/2 lime
  • Salt to taste

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper. Spread them evenly on a baking sheet and roast for 25–30 minutes, flipping halfway through until they are tender and lightly browned.
  2. Cook the Chicken: Season the chicken breasts with salt and pepper. Grill or pan-sear over medium heat for about 6–7 minutes per side until thoroughly cooked. In the last few minutes, brush generously with BBQ sauce. Once done, let the chicken rest for a few minutes before slicing it thinly.
  3. Make the Yogurt Sauce: In a small bowl, whisk together the plain Greek yogurt, minced garlic, lime juice, and a pinch of salt. Chill this creamy sauce until ready to use to enhance the flavors of the bowl.
  4. Assemble the Bowl: Start by placing the cooked brown rice or quinoa at the base of each bowl. Layer with roasted sweet potatoes, sliced BBQ chicken, black beans, corn, thinly sliced red onions, and avocado slices. Drizzle the creamy garlic yogurt sauce on top and sprinkle with fresh cilantro if desired.
  5. Serve: Add a lime wedge on the side for an extra citrusy kick and serve the bowl warm for a satisfying and flavorful meal.

Notes

  • You can substitute quinoa for brown rice to make the bowl gluten-free.
  • The creamy garlic yogurt sauce is optional but adds a delicious tangy flavor and creaminess.
  • Use fresh corn kernels if available for better texture; canned or frozen works well too.
  • Adjust the amount of BBQ sauce according to your preference for sweetness and smokiness.
  • Leftover roasted sweet potatoes and chicken make excellent meal prep options for multiple days.
  • For a spicier kick, add a pinch of chili powder or cayenne to the sweet potatoes before roasting.
  • Make sure the chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
