Salmon and Marinade

  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh ground black pepper

Garnish

  • ¼ cup peanuts, chopped
  • 1 tablespoon cilantro, chopped

Instructions

  1. Preheat the oven. Set your oven to 425°F to prepare for baking the salmon.
  2. Prepare the salmon fillets. Place the salmon fillets skin-side down into a deep dish with a tight-fitting lid and set aside for marinating.
  3. Make the marinade. In a medium bowl, whisk together the PB2 powdered peanut butter, water, olive oil, miso paste, seasoned rice vinegar, soy sauce, grated ginger, minced garlic, and ground black pepper until smooth.
  4. Marinate the salmon. Pour the prepared marinade over the salmon fillets in the dish, cover with the lid, and refrigerate for at least 30 minutes, or preferably overnight for deeper flavor.
  5. Arrange fillets in baking dish. Remove the salmon from the refrigerator and place the fillets onto a deep 9×13-inch baking dish, ensuring at least ½-inch space between each piece.
  6. Add marinade and bake. Pour any remaining marinade over the fillets, then place the dish into the preheated oven and bake for 20 minutes until the marinade is browned and the fish is firm to the touch.
