Ingredients

Scale

Salmon and Marinade

  • 4 salmon fillets (6 ounces each), skin on
  • ¼ cup Original PB2 Powdered Peanut Butter
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 1 tablespoon miso paste
  • 1 tablespoon seasoned rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon freshly ground black pepper

Garnish

  • ¼ cup chopped peanuts
  • 1 tablespoon chopped cilantro

Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) to ensure it reaches the perfect baking temperature for the salmon.
  2. Prepare Salmon: Place the salmon fillets into a deep dish with a tight-fitting lid, ensuring the skin side is down. Set aside while preparing the marinade.
  3. Make Marinade: In a medium bowl, whisk together PB2 powdered peanut butter, water, olive oil, miso paste, seasoned rice vinegar, soy sauce, grated ginger, minced garlic, and black pepper until smooth.
  4. Marinate Salmon: Pour the marinade evenly over the salmon fillets in the dish. Cover with the lid and refrigerate for at least 30 minutes to allow flavors to meld. For deeper flavor, marinate overnight.
  5. Arrange for Baking: Remove the salmon from the marinade and place each fillet in a deep 9×13-inch baking dish, leaving about ½-inch between each piece. Pour any remaining marinade over the fillets.
  6. Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the marinade has caramelized and browned lightly, and the salmon is firm to the touch.
  7. Garnish and Serve: Remove from oven, sprinkle with chopped peanuts and cilantro. Serve immediately, spooning any remaining marinade from the pan over the salmon.

Notes

  • The marinade can be made a day ahead to enhance flavor.
  • Salmon fillets should be fresh and preferably skin-on for the best bake and flavor.
  • If you prefer a less intense peanut flavor, reduce PB2 powder slightly.
  • Serve with steamed vegetables or a fresh salad for a complete meal.
  • Ensure the marinade covers the fish evenly for balanced flavor.
