  • 1 10 oz container cherry tomatoes
  • 3 cloves garlic, minced

Instructions

  1. Prepare the Salmon: Preheat your oven to 400°F (205°C). Season the salmon with salt, pepper, and your choice of seasoning, such as Za’atar. Place the salmon on a baking pan. Bake for 25 minutes or until the salmon flakes easily with a fork. Remove from the oven and break into pieces once slightly cooled.
  2. Roast the Feta and Tomatoes: In a separate baking dish, place the cherry tomatoes and the block of feta cheese in the center. Add minced garlic, season with salt and pepper, and drizzle olive oil over everything. Bake in the oven alongside the salmon at 400°F for 25 minutes until the tomatoes burst and the feta becomes soft and slightly golden.
  3. Create the Sauce: Remove the baked feta and tomatoes from the oven. Using a fork or potato masher, mash the tomatoes and feta together until you achieve a smooth, uniform sauce.
  4. Combine Pasta and Sauce: Add the cooked pasta directly into the baking dish with the feta-tomato sauce. Mix thoroughly to ensure all the pasta is coated.
  5. Add the Salmon: Place the cooked, broken-up salmon pieces on top of the pasta and gently fold them into the cheesy tomato sauce for an even distribution.
