Ingredients

Scale

Wet Ingredients

  • ½ cup + 2 tablespoons unsweetened applesauce (homemade or store-bought)
  • ½ cup milk of choice
  • 2 tablespoons melted butter or oil of choice
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt (optional – see notes)

Add-ins

  • ½ medium apple, grated

Instructions

  1. Preheat and Prepare Pan: Heat your oven to 375°F (190°C). Prepare a mini muffin tin by spraying with oil, greasing with butter, or lining with paper liners. A silicone muffin pan is recommended for easy release.
  2. Mix Wet Ingredients: In a large bowl, whisk together the unsweetened applesauce, milk, egg, melted butter, and vanilla extract until the mixture is well combined and smooth.
  3. Combine Dry Ingredients: Add the all-purpose flour, baking powder, cinnamon, nutmeg, and optional salt to the wet mixture. Whisk gently just until the streaks of flour disappear to avoid overmixing.
  4. Fold in Grated Apple: Gently fold the grated apple into the batter to incorporate without breaking down the texture.
  5. Scoop Batter: Using a 1 tablespoon cookie scoop, portion the batter evenly into the prepared mini muffin tin.
  6. Bake Muffins: Bake in the preheated oven for 14-16 minutes, or until a toothpick inserted in the center comes out clean. Avoid overbaking to keep muffins moist.
  7. Cool and Remove: Allow the muffins to cool in the pan for a few minutes before carefully removing them. This will help them hold together and prevent breaking.

Notes

  • Salt: Omit salt if making muffins for babies under 1 year old.
  • Flour Substitution: Substitute up to half the all-purpose flour with whole wheat flour for added fiber. For gluten-free options, use your preferred cup-for-cup gluten-free flour blend.
  • Grated Apple: Optional but adds extra apple flavor and a pleasant texture without being overly noticeable.
  • Pan Choice: Silicone muffin pans make it easier to remove muffins without breakage and are especially useful for frequent baking.
  • Storage: Store muffins in an airtight container at room temperature for up to 2 days or freeze for longer storage. Thaw before serving.
