Instructions

  1. Prepare the oven and pan: Preheat oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper. Set aside.
  2. Mix cinnamon sugar: In a small bowl, whisk together brown sugar and cinnamon and set aside for the topping.
  3. Combine eggs and sugar: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is smooth and well combined.
  4. Add butter and vanilla: Stir in the melted butter and vanilla extract until the batter is smooth and uniform.
  5. Incorporate dry ingredients: Add the all-purpose flour, baking powder, baking soda, and salt to the wet ingredients. Mix gently until just combined to avoid overmixing; the batter will be thick.
  6. Fold in apples: Gently fold the chopped apples into the batter, distributing them evenly.
  7. Layer the batter and cinnamon sugar: Pour half of the batter into the prepared loaf pan. Sprinkle about three-quarters of the brown sugar and cinnamon mixture over the batter. Then carefully spread the remaining batter on top. Sprinkle the remaining cinnamon sugar mixture over the top and gently swirl it into the batter with a knife or spoon to create a marbled effect.
  8. Bake the bread: Bake for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the bread starts to brown too quickly, tent it with aluminum foil during the last 10 to 15 minutes to prevent burning.
  9. Cool and serve: Allow the bread to cool completely in the pan on a wire rack before slicing. Serve fresh and enjoy.
