Ingredients

Scale

Pastry

  • 1 sheet store bought puff pastry (half of a 17.3oz package, thawed)

Almond Filling

  • 1 cup (96g) blanched almond flour
  • ½ cup (104g) light brown sugar (packed)
  • ½ cup (113g) salted butter (softened)
  • 1½ tablespoons all purpose flour (plus additional for rolling the puff pastry)
  • 1 large egg
  • 1 teaspoon pure almond extract

Topping

  • ¼ cup (28g) sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare for baking the croissant bites.
  2. Prepare Almond Filling: Using a hand mixer, combine almond flour, brown sugar, softened butter, all purpose flour, egg, almond extract, and a pinch of salt. Mix just until the ingredients are blended, being careful not to overmix to keep the filling light and creamy. Set aside.
  3. Roll and Cut Puff Pastry: Lightly flour your work surface and roll out the thawed puff pastry sheet into an 11×11 inch square. Cut this into twenty-four 2×2 inch squares for fitting into the mini muffin pan.
  4. Shape Pastry in Muffin Pan: Gently press each puff pastry square into the individual cavities of a 24-count mini muffin pan, creating small cups ready to hold the almond filling.
  5. Fill Pastry Cups: Fill each pastry cup with about one tablespoon of the almond filling. Using a small cookie scoop helps portion the filling evenly. Top each with a few sliced almonds for added texture and decoration.
  6. Bake: Place the muffin pan in the preheated oven and bake for 10-15 minutes until the puff pastry is golden brown and crisp.
  7. Cool and Garnish: Remove the pan from the oven and place it on a wire rack to cool slightly. Carefully lift the almond croissant bites from the pan using a small spatula. Dust them generously with powdered sugar before serving for a sweet finish.

Notes

  • Ensure the puff pastry is adequately thawed but still cold for easy handling and best puffing results.
  • Do not overmix the almond filling to maintain a light texture.
  • You can store baked almond croissant bites in an airtight container at room temperature for up to 2 days or freeze them for longer storage.
  • For extra flavor, consider adding a splash of vanilla extract along with the almond extract.
  • Use a small cookie scoop for even filling portions and less mess.
